フラボン (flavone) は有機化合物の一種で、フラバン誘導体の環状ケトン。狭義には化学式 C15H10O2、分子量 222.24 g/mol の化合物、2,3-ジデヒドロフラバン-4-オン (2,3-didehydroflavan-4-one、右図) を指す。植物体内においてフラバノンからの脱水素によって生合成されると考えられている。
広義には後述のフラボン類に属する誘導体をフラボンと称する。
フラボン類
広義のフラボン(フラボン類)はフラボノイドのカテゴリのひとつである。フラボノイドの中でフラボン構造を基本骨格とし、さらに3位にヒドロキシ基 (OH) を持たないものがフラボンに分類される。
黄色~白色が特徴の植物色素であり、植物体を太陽の紫外線から守る役割をしている。自然界には主としてヒドロキシ化体あるいは配糖体として存在し、特にさまざまな植物からフラボンが見つかっている。野菜やハーブなどの食品にも多く含まれ、その抗酸化作用が注目を集めている。
フラボン骨格の3位が酸化されヒドロキシ基が入った誘導体はフラボノールとして区別される。また、アリール基が2位ではなく3位(カルボニル基のα位)に置換したものはイソフラボンと呼ばれる。2-3位の二重結合が水素化された構造のものはフラバノン、あるいはフラバノールに分類される。
