ベルベレ(アムハラ語: በርበሬ bärbäre, ティグリニャ語: በርበረ bärbärä)とは、エチオピア料理とエリトリア料理で用いられるミックススパイスである。通常はトウガラシ、コリアンダー、ニンニク、ショウガ、エチオピアホーリーバジル(ベソベラ)の種子、コラリマ(en)、コヘンルーダ、アジョワン、ラドゥニ(en)、ニゲラ、フェヌグリークなどのスパイスやハーブを調合して作られる[1][2][3][4][5]。ベルベレには栽培植物とコラリマ(Aframomum corrorima)のようにエチオピアに自生する野生植物の両方が使われる[6]、国際的に知名度が低いハーブやスパイスが加えられることもある。
エチオピア北部の家庭では料理に常用され、家庭ごとに異なる配合の自家製のベルベレのほか、市販の既製品も利用されている[7]。エチオピア料理の主食であるインジェラとともに食べるワットに使われることが多く、ベルベレを使った辛いワットはアムハラ語で「赤いワット」を意味する「カイ・ワット」と呼ばれる[8]。ベルベレはインジェラのスプレッドにもなるほか、生肉のソースにも使われる[9]。
また、ベルベレはトウガラシそのものを指す言葉としても使われる[1]。
