English: Khua kling (Thai script: คั่วกลิ้ง) is a type of dry fried Thai curry from Southern Thailand which does not contain coconut milk. It is extremely spicy, pungent and made with a large amount of turmeric. The meat (pork, beef, chicken or lamb) is either minced, chopped or sliced very thin. This dish was made with pork at a Southern Thai "Khao kaeng" or "Rat khao" restaurant (a simple restaurant where most of the food has been made in advance) in Chiang Mai, Northern Thailand.
