English: A thank you note signed by Tokugawa Iyeyasu the shōgun, dated around 1600 (later day facsimille). Two barrels of Konoshirozushi, a local cuizine of Kumihama district in present day Kyōtango, were sent as gift to the first shogun. That cuisine is a type of hard pressed sushi, substituting steamed rice to cooked soy pulp, or tofu dregs. The head and tail parts of the fish, Konosirus punctatus, are kept to show the shape of the fish.
